CHICKEN SHAHI KORMA VS KORMA RECIPE

This Chicken Shahi Korma recipe is based on a dish we loved at a Minneapolis Indian restaurant (Taste of India).
It’s worth the effort!

Eight and a half years ago, when I originally published this, I had just finished a whirlwind few weeks of preparations for the publication of “Twisted: A Minneapolis Tornado Memoir.”

I decided to post my Chicken Shahi Korma recipe now that everything have settled down.

Before writing this, it had been a favourite of mine for a long time.

Being away from the favourite restaurant where it was originally inspired and back in Canada has made it an especially useful dish to have on hand.

WHAT IS CHICKEN SHAHI KORMA?

When ordering Indian food, korma is a typical item, but its composition varies widely.

Most typically, I’ve seen it as a creamy curry with pureed cashews. Aside from the nuts, they usually contain onions, spices, and yoghurt or coconut milk.

While Korma is a regular dish on Indian restaurant menus, Shahi Korma is not as common.

The dish is a “royal” variant of a simple korma. The cashews, raisins, and paneer pieces make it “royal”.

HOW THIS RECIPE WAS CREATED

Chicken Shahi Korma was my absolute favourite dish at Taste of India in Minneapolis. I mean, I’ve fallen in love with it and don’t seem to stray!

We were always in the mood for Shahi Korma, but not so much for traffic, noise, and, well, people.

A recipe duplication was one of my few practical “Autistic Superpowers” at the time.

If I like something, I can typically make it in a similar way.

Just knowing the answer to questions like “Bob is 3 years older than Susan, who is twice the age of David” has been described before.

I’m not sure how I know that, it’s simply there.

It’s the same with my recipe replication. I can taste something and spit out an ingredient list with proportions and ratios. It’s there.

I don’t know. Minds are odd.

AS A CAVEAT

To be clear, I don’t conduct a lot of research into the history, methods, or other specifics of what I’m doing; instead, I prefer to wing it.

There is a strong probability that some of my methods, and even some of my ingredients, may be a little off, but that’s fine. For some reason, I’ve found that going in “blind” helps me get a more realistic picture of how everything will come together in the end.

Ethnic cooking is a mystery to me because I have no understanding what regional variations exist on a meal or how authentic the dish I’m attempting to recreate actually is.

Without making any claims regarding the source material, I merely know that this tastes exactly like the original.

Apart from that, Taste of India’s Chicken Shahi Korma is an excellent source of inspiration and you should get it when you visit Minneapolis!
